Discover the Aligot of Aubrac and ancestral cheesemaking traditions

In the heart of the Aubrac region, the Jeune Montagne cheese dairy has been perpetuating the cheese-making traditions inherited from the buronniers (traditional cheesemakers) for over 60 years. A true benchmark of the region, it invites visitors to discover Aligot de l’Aubrac, Laguiole AOP and Tome fraîche de l’Aubrac IGP, emblematic products of a living and collective know-how.

     For over six decades, Jeune Montagne has been perpetuating the production of Laguiole AOP and other cheese specialties from the Aubrac region. The cooperative now brings together 76 farms committed to the Laguiole Protected Designation of Origin.

Together, they value natural pastures, a high-altitude climate, and a demanding production method, all essential to the quality of their cheeses.

The cheese shop offers a wide range of products, exclusively from the Aubrac region.
From aged cheeses and aligot to fresh tome, each specialty reflects the richness of the pastures and the unique character of the plateau.

Visit the cheese factory

      A visit to Jeune Montagne offers a complete immersion into the Aubrac cheese-making process. It begins with a film about the history of Aligot and cheesemaking in the traditional mountain huts (burons).
The experience continues from a gallery overlooking the workshops, allowing visitors to observe the cheesemakers at work. The tour concludes with a tasting of Laguiole AOP cheese, offered at various stages of ripeness. Visits are particularly recommended in the morning, the ideal time to witness the production of fresh Tome cheese and Laguiole AOP.

Meet the producers

     Jeune Montagne also offers farm visits and excursions through wildflower meadows, providing an opportunity to discover the agricultural world of the Aubrac region.

At the farm:
Tuesdays, Thursdays, and Saturdays during school holidays. Meet the farmers, their cows, and the pastures at milking time, followed by a delicious afternoon snack.

In the pastures:
Wednesdays in summer, enjoy a guided walk to discover the flowers and herds that give Laguiole AOP cheese its distinctive flavor. A nature experience to share with the family, complete with a delicious afternoon snack.

These visits are subject to a fee and require reservations. Group bookings are also available.
