The last working buron in the Aubrac

Perched at an altitude of 1,333 meters on the Aubrac plateau, the Buron de la Treille is an iconic site where an age-old cheesemaking tradition lives on. Located on the Route des Lacs (Lakes Route), this unique buron is the last one still operating on the plateau and the only one to produce Laguiole Buron AOP cheese directly on site. A must-see to discover the authenticity and expertise of the Aubrac region.

The buron de la treille, unique on the aera

     Burons are traditional cheese dairies where Fourme de Laguiole cheese was once made. Today, most of them have been converted into restaurants, with the exception of the Buron de la Treille. It is the last remaining buron still operating on the Aubrac plateau and the only one to produce Laguiole Buron AOP cheese directly on site.

     At Buron de la Treille, tradition and modernity blend harmoniously. Time-honored techniques are meticulously followed: curdling, pumping, pressing… until the cheese is ready. Aging on-site in a vaulted cellar lasts from 4 to 24 months, depending on the desired aromas and texture. In summer, direct sales at the buron also offer the opportunity to discover tomme cheese and butter, also made on-site according to Aubrac traditions.

     Every day from 4:30 pm, watch the Simmental and Aubrac cows being milked, then follow the traditional cheesemaking process step by step. An authentic and friendly experience, ideal for sharing with family or friends.
